a roller coaster of craziness

So what's been going on the last few months? Well, besides the obvious of having, ahem, twins...we've been quite busy!

Just about every huge life change has happened to us. And we're living testimony that you survive trials in life!

In December of 2009, my husband got laid off from his job. Yeah. Stress. Two-ish months before the twins were going to be born. That's a pretty fantastic time to lose your insurance. Ha. Not!

It actually turned out to be a blessing in disguise though. Since the hubsters was unemployed AND I was pregnant, that meant I was automatically qualified for Medicaid, which meant NO FINANCIAL WORRIES for the remainder of the pregnancy AND delivery. One word--

BLESSING!

I was super scared about how much it was going to cost to have twins, especially if they needed any NICU time (which Ainsley did--for a week). How in the world were we going to afford that?! Well, God worked that one out for us. He took Jason's job!

Then, since we were unemployed (meaning zero income) we also had to foreclose on our condo. We tried a short sale. But the insurance company decided they'd only approve it if we gave them $10,000. Yeah. Um, psst, we're unemployed!!! Oh well. We tried. So now the SIX of us have moved from our dinky 970 sq foot, 2-bedroom condo into a much bigger, much roomier, much lovelier house that our dear friends are renting to us. Again, blessing in disguise (or not so disguised!).

As far as the work front goes...still nothing. We live in one of the worst (if not THE worst) cities for unemployment. There just isn't anything. So now we're looking nationwide for something. Anything.

And that's where we're at. I've started a little business on Etsy (that I'll tell you about later), that helps bridge the gap between unemployment benefits and bills that need to be paid. We've had to swallow our pride time and again in applying for assistance. But what're you gonna do with four kids and no income? It's where a lot of people in our country are at. It's tough.

So I guess To Save A Penny will be a chronicle of our survival!

I know. 8 months.

That's how long it's been since I last posted. Phew!

So why has it been 8 months? Well...because these little beauties graced our lives 6 months ago...

On March 6th, 2010, we welcomed Ashley Jade and Ainsley Joy into our lives! It's been a bit of a whirlwind since then but we're so thankful for them! Here they are now, 6 months later:

making the most of the time

With a new year comes new goals...right?

Yeah, not so much.

Usually.

This year though I've made some really simple goals. I would have made them at a different time of the year, but it just so happens that they come at the beginning of a new year. Perfect!

My hubby and I (and our two girls) have been blessed with a really fantastic church that faithfully preaches the Word of God at every opportunity! We are in a place where we are growing so much from week to week, and we are so thankful! We are being challenged in our spiritual lives and so a couple of my new goals have sprung from that. Here they are:

1. My hubby and I have committed to studying the books of 1 and 2 Peter together. To help us in our study we bought a study guide that we're working through together.

2. To go along with studying 1 and 2 Peter, I have committed to memorizing both books by the middle of the year. Broken down, that is roughly 6 verses a week. For me, memorization comes fairly easily so this isn't too daunting of a challenge for me. As a child, I participated in a program called AWANA, where I memorized Scripture every week. Most of the verses I know now are from that time. I also started to memorize the book of Ephesians a few years ago and got part way through chapter two...it's amazing how much of that I still remember, years later. I am SUPER excited for this goal! This week is 1 Peter 1:1-5--and I'm well on my way!

Those are the main two goals that I've made this year. I have some other goals floating around in the back of my mind that I'll share later.

unemployment: week 1

I mentioned a couple days ago that my husband got laid off...again. We just completed Week 1 of Unemployment #2! And we're making it!

However, this time is slightly different than last time. THIS time, we're pregnant with twins that are due in two months. Eek! We're also in the middle of trying to short sale our two bedroom condo, in the hopes of moving to a bigger place to accommodate our quickly growing family. This has made for some interesting new trials in the insurance and housing departments!

As we travel through this unemployment period, I'll update you on how we're surviving week after week. So, for this week, here's how it went and here are the things we did:

we used gift cards to buy some groceries from Walmart. So far very little has been spent on groceries! My goal is to spend around $20 a week.
we pretty much quit eating out. We did pick a couple things up and eat them at home (both were around $5).
we are being more creative in eating at home, including using a lot from our stockpile.
we applied for Medicaid and requested info on our insurance Cobra, still waiting on all that.
I talked to both of my doctors to make sure they accept both Medicaid and the Cobra, just in case.
my hubby applied for unemployment.
he also contacted a company regarding a job...more details on that later.
we contacted our HOA to see about getting payments suspended. Verdict: Nope. We're stuck with an insanely high HOA. Still figuring out what to do about that.
we are enjoying some really nice time together as a family...what a blessing this time has been so far!

So we had a really productive week! We're getting everything lined up that we can think of and seeking to make God-honoring decisions about our future. God has truly been good to us and we're excited to see where He leads us next!

Happy New Year!

So I didn't mean to take a month off from blogging...it just sort of happened. There was a lot of craziness around here with all the Christmas and New Year's festivities! It was a fantastic time with friends and family!

As the last month was going along and I went day to day not blogging, I was trying to think of what to do this year here on the ol' blog. Recently we finished Dave Ramsey's class, Financial Peace University, and I was going to start tracking the debt we were paying off from month to month. I was going to show you how we were doing every month in the saving money department by being frugal, clipping coupons, etc.

Then December 29th happened.

My precious hubby got laid off from his job. That's the second time in one year! What a year! I was thankful that they at least waited until AFTER Christmas and AFTER my birthday (which is the 28th) to do the laying off. Being 28 weeks pregnant with twins has been the main concern we have. Insurance is expensive. Doctors are expensive. Hospitals are expensive. Babies are expensive. Diapers are expensive! But we'll make it! We'll figure something out!

So now the plan for my blog has changed. I'm going to document our journey through unemployment, a twin pregnancy, a short sale or foreclosure looming in the near future, etc.

I've already been coming up with interesting ways to save money and cut back, while still enjoying the things we love! Come along and see how we're doing it! And feel free to give me ideas!

Yesterday was an odd day for our family. My hubby was out switching the seats around in our van when he got a phone call from a good friend of ours from church.

Our pastor had had a heart attack a couple hours before and went home to be with Jesus.

Unexpected.

My heart immediately ached, not for him, but for his wife. For him, I know his faith has now become sight. It's those that he's left behind that are the hurting ones now. So my prayers are for his wife and kids. My prayers are for our church as we look for and to a new pastor.

If you have a moment, would you pray for his wife also? And for our little church family?

It's Christmas-time!

With Christmas comes the sometimes stressful task of shopping for everyone on your list. This task becomes even more stressful when you don't have a lot of money. Our culture has pounded into our heads the need for the biggest and best gifts! If you don't get the teenager on your list the latest and greatest gadget, you feel inferior.

Here's my word of advise this Christmas season--don't bow to the pressure. Shop in moderation! Shop creatively!

Here's what my family and I have done in Christmas' past: we make a budget! Novel idea, I know!

I write down everyone I need to buy gifts for. I then write down the amount of money I have to spend on gifts and split it among everyone on our list. No credit cards are used! It's the best way to have a debt-free, stress-free Christmas!

Kristin wrote me with a great post on her family's journey of saving enough money to go on a trip to Disney World! They did it once, and now they're doing it again! She has some great ideas and tips for how to save money for that special trip!

When my daughter first became interested in the Disney Princesses, I got so excited. I started making all these elaborate plans about a fantastic trip to Disney World. Then I saw the price tag of a Disney vacation and compared our finances and those dreams diminished. There was no way we could afford a Disney vacation on our current budget.

It wasn't long after that eye opener, that I discovered coupon shopping. I had always used coupons, but I had no idea the amount I could have saved. I started learning everything I could about saving money. I learned how to combine coupons and sales, how to stockpile and how to save my family thousands of dollars a year.

I used coupons adamantly for almost a year (starting Jan 2008) before I realized we could now afford a Disney vacation. So I started planning and by May 2009, we were at Disney World. We had 8 wonderful, magical days at the parks and it was everything I had dreamed of and more.

When we returned home, we decided we wanted to do it again, but we didn't want any of the funds coming out of our budget. This time it was going to be trickier because I was already saving thousands of dollars a year with coupons. If we didn't want to feel the pinch, I was going to have to get resourceful.

So I started looking around online trying to figure out how I could save this money without designating any of our budget towards our trip. I had a little less then a year to save.

The first and most obvious way to me was to start saving all our loose change. I designate $150 a week for groceries, out to eat, entertainment, etc etc. (that $150 covers everything that is not gas or monthly bills). So instead of using that amount out of our checking account, I decided to withdraw it in cash instead. So when I shop, I use cash and I always break my dollars. The change goes into the Disney fund. It usually averages out to about $10 a week. That's $520 a year! That's 1/4th of the cost of our trip and we don't miss that money at all.

Out of that money, I also save anything that is left over at the end of the week. This inspires us to eat out less and not buy items we don't need. Also, if we were planning to spend money and we were able to resist, that money goes into the fund as well because it would have been spent otherwise.

Another great way I found to add to our Disney fund was to save all found money. Found money can be anything from $1 in the dryer to an unexpected gift from a relative. It could also be money earned off a yard sale or by selling your Aunt Irma's spoons on Ebay. If we weren't planning on receiving the funds, they get applied to our trip.

The next way I started to save was by using rebates. Prior to saving for the fund, I was not very
diligent about using every rebate available to me and there were times that I would forget to mail in my receipt and i would lose out on the rebate. So I became more dedicated and organized and in three months I have earned approximately $400 in rebates.

I also found ways to earn money online. I participate in surveys and various rewards programs. I am still not as diligent about the surveys as I could be, but I'm working on it.

I started saving for our trip on June 1st. As of October 8th, our Disney fund is at $1050. And not one cent has come out of our monthly budget. We don't miss the money at all. A Disney trip is not out of your reach if you just become resourceful. As the great Walt said "If you can dream it, you can do it."

pumpkin oat muffins

I'm reposting this post that I did last year...because these muffins are SO tasty and pretty healthy, not to mention perfect for the fall weather!

PUMPKIN OAT MUFFINS

My two-year-old, Kate, and I made these super yummy muffins (from the Simple and Delicious magazine) today using some leftover pumpkin we had in the fridge. Everything else we had on hand so the total cost was free for us. If you don't have pumpkin, you can get a small can for about $1.00. Everyone should try this recipe because it's really good and easy enough to have your two-year-old help!

Pumpkin Oat Muffins
Makes 12 muffins

1 c. flour
1/2 c. packed brown sugar
2 t. baking powder
1 t. pumpkin pie spice (we used cinnamon because we don't have this, plus I used way more than a teaspoon because I love cinnamon!)
1/2 t. salt (I omitted this because we never add salt to our baking, who needs the extra sodium?!)
1/4 t. baking soda
1 egg, lightly beaten
3/4 c. canned pumpkin
1/4 c. milk
1/4 c. vegetable oil
1 c. old-fashioned oats
1/2 c. raisins (again, I omitted these because I hate raisins in baked goods, feel free to add them though if your family likes them)

TOPPING:
1/3 c. packed brown sugar
1 T. flour (I didn't add this because I don't like how the flour makes toppings...uhhh...floury?!)
3/4 t pumpkin pie spice (again cinnamon, and way more than 3/4 teaspoon)
1 T cold butter

Set oven to 375 degrees.

Mix dry ingredients together. Then mix the egg, pumpkin, milk and vegetable oil. Pour wet ingredients into the dry ingredients and mix just until moistened. Add oats and raisins.

Fill greased muffin pan about 2/3 full. Top with yummy topping! Bake for about 15-20 minutes (15 minutes was enough for ours). Let cool for 5 minutes and then take out of pan. Yum!

Total cost: free or $1.00

My Fresh & Fit Friday topic is something that has become a pet peeve to me. I've talked about it before but it just really bothers me. It's canned foods. What's wrong with canned foods, you ask? Nothing, in and of themselves. I'm a big fan of canned foods actually. Most of them at least. But I've noticed an annoying trend.

Have you ever read the ingredients for canned beans, vegetables or fruits? They're full of high fructose corn syrup, sugar and/or salt. I was trying to find some plain kidney beans for some chili a few weeks ago and I couldn't find any. I finally had to call my hubby and have him stop at Fresh & Easy for me (one reason why I love Fresh & Easy...their brand has a lot of natural stuff).

It's such a weird thing because who would think all that stuff would be added to beans? I wouldn't. And that's why I'm only recently finding this stuff! It's so much healthier to buy the plain beans (No Salt Added) or the No Salt Added vegetables and add your own seasonings. Then YOU'RE in control of your salt/sugar intake!

So, start reading labels, if you don't already. You'll be shocked at the stuff that's in canned goods.

Hi friends!

I've been kinda MIA on my blog for a while now....and I feel sorta bad! I've been doing what I can but just haven't been feeling well enough! However, I've been starting to feel SO much better the last few days so I'm hoping the "morning" sickness is OVER, or at least mostly over! And I'm hoping to get back into the swing of things this coming week! Hoping...=)

On to some other news: I had an ultrasound yesterday and got to see the babies! Looks like it's GIRLS! We are going to have one house full of girlies! My poor hubby! We're super excited though! My hubby is a great Dada to girls! Now if we could just think of some names...we had our boy names all picked out, but for some reason we're having a hard time with the girl names! Any ideas?

There's another kids consignment sale here in Henderson/Las Vegas. It's called Pickled Pepper Kids! Go here to read more! It's open to the public from October 8th-10th! It's a great place to find baby/kids stuff at a low price! Or if you have stuff you want to sell, you can do that too and you'll make 2/3 profit! Here's the little blurb one of the organizers sent me about it:

Have you heard of Pickled Peppers Kids consignment sales? This is a great way to stretch your dollar. You know all those things you bought for your kids that they played with once and then forgot about? What about that stuff that they outgrew in a matter of weeks?

If you've been to a seasonal consignment sale for children before, then you know how it works. There are tons of these in the Eastern states, and we finally have one here in Vegas. Basically, you tag your items (you choose the price), drop them off at the sale location, and after the sale is over, PPK sends you a check for 2/3 of the selling price of your items. This is tons more than consignment stores pay and WAY easier than selling things one at a time on Craigslist or ebay. The sale organizers do all the advertising so that there will be plenty of shoppers to buy your things.

The best perk of consigning is that you get to shop early. For new moms, they have swings, infant seats, strollers, beds, all kinds of maternity clothes and nursing supplies and more. For older kids, there are bikes, sandboxes, play equipment, toys, games, dvd's, and tons of clothes.

This is the 5th event Pickled Peppers Kids has done, and it gets bigger each time. This time they expect to have over 100 consignors.
There is still plenty of time to register as a consignor for their current event, which runs from October 5th-10th. You won't want to miss this.
